Under the direction of clinical faculty, nutritionist and a chef, the Culinary Medicine elective course will teach medical students nutritional knowledge and culinary skills needed to address chronic disease conditions using whole foods and plant-based diets. In addition to studying principles of the Mediterranean diet and the DASH diet, students will receive hands-on cooking instruction with a focus on making healthy and delicious culturally appropriate dishes. During patient case discussions, students will also learn practical communication skills and mindful eating principles that will support healthy behavior change in their patients. Dr. Park is thrilled to apply her interests in disease prevention, nutrition, and cooking for this fun and innovative initiative. The first hands-on class of the quarter met on zoom January 26th, and students did an excellent job making their chopped salads. Future courses will hopefully be in person at the ARC Test Kitchen.
